Sausage Hashbrown Breakfast Casserole

Description

Hash browns, sausage, eggs, and cheese. What’s not to love? It can be made ahead of time and refrigerated until ready. Great to share at work, for an overnight guest, and Christmas morning!

Ingredients

  • cooking spray
  • 2 pounds hot breakfast sausage
  • 1 (2 pound) package frozen hash brown potatoes
  • 2 cups shredded Cheddar cheese
  • 1 (7 ounce) can green chile peppers (Optional)
  • 8 large eggs
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch baking dish with cooking spray.
  2. Cook and stir sausage in a hot skillet over medium heat until crumbly and no longer pink
  3. 5 to 7 minutes. Drain and discard grease
  4. and transfer sausage to a bowl.
  5. Add hash browns to the skillet; cook in the residual grease
  6. stirring occasionally
  7. until lightly browned
  8. about 8 minutes. Remove from the heat.
  9. Transfer hash browns to the prepared baking dish and spread in an even layer across the bottom. Sprinkle cooked sausage over top
  10. then layer with Cheddar cheese and chile peppers.
  11. Whisk milk
  12. eggs
  13. salt
  14. pepper
  15. onion powder
  16. and garlic powder together in a bowl. Pour over hash brown mixture.
  17. Bake casserole
  18. uncovered
  19. in the preheated oven until bubbly and the top is golden brown
  20. 35 to 40 minutes.
