Sarah’s Banana Bread Muffins

Description

This is a recipe for people who like banana bread and muffins. These are great breakfast muffins! You may substitute coconut for some or all of the walnuts if you wish.

Ingredients

  • 1 cup white sugar
  • ½ cup vegetable oil
  • 1 egg
  • 3 ripe bananas, mashed
  • ¼ cup chopped walnuts
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  2. Mix sugar
  3. oil
  4. and egg in a large bowl until light and creamy. Stir in bananas and walnuts. Add flour
  5. baking soda
  6. and salt; stir until completely smooth. Spoon batter into the prepared muffin cups
  7. filling each 3/4 full.
  8. Bake in the preheated oven until tops spring back when lightly pressed
  9. about 30 to 40 minutes.
