Salmon Cakes III

Description

This recipe is an old family favorite that we enjoy from time to time. It’s hearty, flavorful and great alternative to hamburgers! Substitute cubed cooked potatoes for the bread, if you like.

Ingredients

  • 1 (14.75 ounce) can salmon, undrained and flaked
  • 1 slice bread, shredded
  • 1 small onion, grated
  • 1 tablespoon all-purpose flour
  • 1 egg
  • salt and pepper to taste
  • 1 cup vegetable oil for frying

Instructions

  1. Mix together salmon
  2. onion
  3. bread
  4. egg
  5. flour
  6. salt
  7. and pepper in a large bowl until well combined. Shape into 4 equal patties.
  8. Heat oil in a large skillet over high heat.
  9. Cook patties in hot oil until browned on both sides
  10. about 8 minutes. Drain briefly on a paper towel-lined plate before serving.
