Salad Ole

Description

This is a colorful and festive Mexican-style salad. You can use lime juice instead of lemon, if desired.

Ingredients

  • 2 cups tomatoes, seeded and chopped
  • 1 cup diced zucchini
  • 1 cup frozen corn kernels
  • ⅓ cup chopped green onions
  • 1 avocado – peeled, pitted and diced
  • ⅓ cup picante sauce
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • ½ teaspoon garlic salt
  • ¼ teaspoon ground cumin
