Roasted Shrimp and Veggie Salad

Description

Shrimp and lots of yummy vegetables are roasted with chili powder and lime juice, and then tossed with lettuce and a chili-lime vinaigrette in this zesty salad recipe.

Ingredients

  • 1 cup sliced cherry tomatoes
  • 1 cup shredded carrot
  • 1 cup diced yellow bell pepper
  • 1 cup diced red onion
  • 1 cup diced asparagus
  • 2 tablespoons olive oil, divided
  • 1 teaspoon chopped fresh oregano
  • 1 pinch chili powder, or to taste
  • salt and ground black pepper to taste
  • 1 pound medium shrimp – peeled, deveined, and tails removed
  • 1 tablespoon fresh lime juice, or to taste
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • ½ teaspoon chili powder
  • salt and ground black pepper to taste
  • 4 cups mixed salad greens
