Roasted Asparagus and Mushrooms

Description

I love roasting veggies and hit on this WONDERFUL combo. You could use a Hollandaise on the side…. but why??

Ingredients

  • 1 bunch fresh asparagus, trimmed
  • ½ pound fresh mushrooms, quartered
  • 2 sprigs fresh rosemary, minced
  • 2 teaspoons olive oil
  • kosher salt to taste
  • freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C). Lightly grease a baking tray with nonstick spray.
  2. Place asparagus and mushrooms in a bowl. Drizzle with olive oil
  3. then season with rosemary
  4. salt
  5. and pepper; toss well. Lay vegetables on the prepared tray in an even layer.
  6. Roast in the preheated oven until asparagus is tender
  7. about 15 minutes.

Prep Time: 10 mins

Cook Time: 15 mins

Total Time: 25 mins

Servings: 6
