Ricotta Cheese Pie I

Description

Creamy, and not too sweet.

Ingredients

  • 1 ½ cups ricotta cheese
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup white sugar
  • 1 ½ cups milk
  • 2 tablespoons cornstarch
  • 1 recipe pastry for a 9 inch single crust pie
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Dissolve cornstarch in 1/2 cup milk in a large bowl; stir in ricotta
  3. remaining 1 cup milk
  4. eggs
  5. vanilla
  6. and sugar until well blended.
  7. Pour filling into unbaked pie crust.
  8. Bake in the preheated oven for 1 hour
  9. or until a knife inserted into the center comes out clean. Sprinkle top with cinnamon; cool.
