Rhubarb Salsa

Description

Rhubarb makes a great addition to a springtime salsa that’s so nice with chicken, fish, on a taco, or just scooped up in a tortilla chip.

Ingredients

  • 2 cups rhubarb, diced small
  • 1 cup chopped apple
  • 3 green onions, chopped
  • 2 limes, juiced
  • 2 tablespoons honey
  • 1 jalapeno pepper, seeded and chopped

Instructions

  1. Bring a pot of water to a boil over medium heat
  2. and stir in the rhubarb; simmer for 2 minutes to blanch. Drain in a colander set in the sink
  3. and let cool.
  4. Stir together the cooled rhubarb
  5. apple
  6. green onions
  7. lime juice
  8. honey
  9. and jalapeno pepper until thoroughly combined.

Cook Time: 5 mins

Total Time: 35 mins
