Rhubarb Almond Bars

Description

A quick and easy bar that I like to use at brunches.

Ingredients

  • ¾ cup all-purpose flour
  • ⅓ cup cold butter
  • ¼ cup white sugar
  • 1 ¼ cups finely chopped fresh rhubarb
  • 1 egg
  • ¼ cup white sugar
  • ¼ cup almond meal

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Process flour
  3. butter
  4. and 1/4 cup sugar together in a food processor until crumbly; press mixture into bottom of 9×9-inch baking pan.
  5. Bake in preheated oven until golden brown
  6. about 15 minutes.
  7. Stir rhubarb
  8. egg
  9. 1/4 cup sugar
  10. and almond meal together in a bowl until combined; spread mixture over crust.
  11. Bake in preheated oven until bubbling
  12. about 30 minutes.
  13. Cool to room temperature on a wire rack before cutting into bars.
