Restaurant-Style Zuppa Toscana

Description

Creamy sausage and potato soup. This recipe is very similar to the one served in a well known restaurant.

Ingredients

  • 1 (16 ounce) package smoked sausage
  • 2 potatoes, cut into 1/4-inch slices
  • ¾ cup chopped onion
  • 6 slices bacon
  • 1 ½ teaspoons minced garlic
  • 2 cups kale – washed, dried, and shredded
  • 2 tablespoons chicken soup base
  • 1 quart water
  • ⅓ cup heavy whipping cream

Instructions

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Place sausage links onto a sheet pan and bake for 25 minutes
  3. or until done. Cut links in half lengthwise
  4. then cut at an angle into 1/2-inch slices.
  5. Place bacon and onion in a large saucepan and cook over medium heat until onion is almost clear. Remove bacon and crumble. Set aside.
  6. Add garlic into the pan with onion and cook together
  7. about 1 minute. Add water
  8. chicken soup base
  9. and potatoes
  10. simmer 15 minutes.
  11. Add crumbled bacon
  12. sausage
  13. kale
  14. and cream. Simmer
  15. about 5 minutes
  16. and serve.
