Refreshing Mint and Tuna Salad

Description

This super easy salad is a refreshing blend of fresh herbs, tuna, and greens. Substitute diced chicken for the tuna if you like. It’s a great summer meal.

Ingredients

  • 1 (5 ounce) can tuna in water, drained
  • 1 (6 ounce) package crumbled garlic and herb feta cheese
  • 3 hearts of romaine lettuce, torn into pieces
  • 1 cucumber, peeled and chopped
  • 4 green onions, chopped
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 4 cloves garlic, minced
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh mint leaves
  • salt and pepper to taste
