Refreshing Cucumber Salsa

Description

Easy to make low calorie salsa that is great with fish tacos.

Ingredients

  • ½ bunch fresh spinach, minced
  • 1 cucumber, cubed
  • 1 tomato, cubed
  • ½ small red onion, cut into 1/4-inch pieces
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • ¼ cup olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper

Instructions

  1. Mix spinach
  2. cucumber
  3. tomato
  4. red onion
  5. garlic
  6. lemon juice
  7. olive oil
  8. salt
  9. and black pepper in a large bowl. Cover with plastic wrap and refrigerate
  10. 1 hour to overnight.
