Red Cabbage and Chickpea Salad

Description

A quick and easy chickpea salad made with leftover vegetables–red cabbage, tomatoes, and onions. I used a sun-dried tomato and tahini salad dressing, though any kind could be substituted.

Ingredients

  • 1 (16 ounce) can chickpeas, rinsed and drained
  • 1 cup chopped red cabbage
  • ½ cup chopped tomato
  • 1 tablespoon chopped onion
  • salt and pepper to taste
  • 2 tablespoons tahini salad dressing
