Quinoa with Veggies

Description

I love quinoa and I wanted to make something that was flavorful and filling. The vegetables can be changed to your liking!

Ingredients

  • 1 cup quinoa
  • 3 cups water
  • 1 pinch salt
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • ½ cup corn kernels
  • ½ teaspoon cumin
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. Bring the quinoa
  2. water
  3. and 1 pinch of salt to a boil in a saucepan. Reduce heat to medium-low
  4. cover
  5. and simmer until the quinoa is tender
  6. about 20 minutes. Once done
  7. drain a mesh strainer
  8. and set aside.
  9. Meanwhile
  10. heat the olive oil in a saucepan over medium heat. Stir in the garlic
  11. and cook until the garlic softens and the aroma mellows
  12. about 2 minutes. Add the red pepper
  13. and corn; continue cooking until the pepper softens
  14. about 5 minutes. Season with cumin
  15. oregano
  16. salt
  17. and pepper
  18. and cook for 1 minute more
  19. then stir in the cooked quinoa and green onions. Serve hot or cold.

Cook Time: 20 mins

Total Time: 30 mins
