Quinoa Side Dish

Description

Quinoa is a great alternative to rice – it’s lighter, and cooks in about half the time.

Ingredients

  • 1 tablespoon butter
  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 2 teaspoons chopped garlic
  • 2 tablespoons chopped fresh parsley
  • ½ tablespoon chopped fresh thyme
  • ¼ teaspoon salt
  • 1 small onion, finely chopped
  • 1 dash fresh lemon juice (Optional)

Instructions

  1. Melt butter in a saucepan over medium heat. Add the quinoa
  2. and toast
  3. stirring occasionally
  4. until lightly browned
  5. about 5 minutes. Stir in broth
  6. and bring to a boil. Reduce to a simmer
  7. cover
  8. and cook for 15 minutes
  9. or until quinoa is tender.
  10. In a bowl
  11. toss quinoa together with garlic
  12. parsley
  13. thyme
  14. salt
  15. and onion. Sprinkle with lemon juice
  16. and serve.

Cook Time: 20 mins

Total Time: 35 mins
