Quick and Easy Sausage and Chicken Gumbo

Description

This quick and easy gumbo is a hearty and filling meal that is great anytime! The frozen vegetables speed up the cooking process and you can add additional protein and spices to suit your taste.

Ingredients

  • 2 tablespoons all-purpose flour
  • 1 tablespoon vegetable oil
  • 1 cup frozen chopped onions
  • 1 cup frozen green bell peppers
  • 1 cup frozen cut okra
  • 1 cup chopped celery
  • 2 teaspoons garlic, minced
  • 1 teaspoon Creole seasoning, or to taste
  • ½ teaspoon dried thyme
  • ½ teaspoon cayenne pepper, or to taste
  • ½ teaspoon salt, or to taste
  • ½ teaspoon ground black pepper, or to taste
  • 1 (3.5 ounce) bag boil-in-bag rice
  • 2 cups chopped roasted chicken
  • 8 ounces kielbasa sausage, cut into 1-inch pieces
  • 1 (14.5 ounce) can diced tomatoes with green peppers and onions
  • 1 (14.5 ounce) can chicken broth

Instructions

  1. Combine flour and oil in a Dutch oven over medium-high heat. Cook
  2. stirring frequently
  3. until it forms a thick paste the consistency of cake frosting. Continue cooking
  4. stirring constantly
  5. until the flour turns dark golden brown
  6. 15 to 20 minutes. The darker the roux
  7. the more depth of flavor
  8. but don’t burn it.
  9. Add onions
  10. bell peppers
  11. okra
  12. celery
  13. garlic
  14. Creole seasoning
  15. thyme
  16. cayenne
  17. salt
  18. and pepper. Cook until vegetables are tender
  19. 3 to 6 minutes.
  20. While vegetables are cooking
  21. bring 4 cups water to a boil in a 2-quart saucepan. Add unopened bag of rice and boil
  22. uncovered
  23. until rice is tender
  24. 10 to 12 minutes. Remove bag from water and drain. Cut open bag
  25. pour rice into a bowl
  26. and fluff.
  27. Stir chicken
  28. kielbasa
  29. diced tomatoes
  30. and chicken broth into the cooked vegetables. Cook until thoroughly heated
  31. about 10 minutes. Serve gumbo over warm rice.
