Quick and Easy Mexican Chicken

Description

An easy entree with Mexican flair! Serve over rice or buttered noodles.

Ingredients

  • 4 skinless, boneless chicken breasts
  • cooking spray
  • 1 clove garlic, minced
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 pinch ground cumin
  • 1 cup salsa
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Heat a greased skillet over medium heat. Rub chicken pieces with garlic
  3. salt
  4. pepper
  5. and cumin to taste; place in the hot skillet. Cook until brown on both sides and no longer pink
  6. 10 to 15 minutes.
  7. Transfer chicken to a 9×13-inch baking dish
  8. top with salsa and cheese
  9. and bake in the preheated oven until cheese is bubbly and starts to brown
  10. 15 to 20 minutes.
