Quick and Easy Avocado Hummus

Description

Serve with dippers. Keeps well, tightly covered, in the fridge for 1 to 3 days.

Ingredients

  • 1 (15 ounce) can chickpeas, drained
  • ¼ cup water
  • 2 tablespoons tahini
  • 1 tablespoon fresh lime juice, or to taste
  • 1 teaspoon sea salt, or to taste
  • 1 clove garlic, roughly chopped
  • ½ teaspoon ground cumin
  • 1 ½ large ripe avocados, pitted and peeled
  • 1 bunch spinach leaves
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Place chickpeas
  2. water
  3. tahini
  4. lime juice
  5. salt
  6. garlic
  7. and cumin in a food processor. Puree until smooth
  8. about 2 minutes. Add avocados
  9. spinach
  10. and olive oil; puree until creamy
  11. 2 to 3 minutes.
