Pumpkin-Chocolate Chip Muffins

Description

These muffins with hemp are nutritional and calorie-dense.

Ingredients

  • 1 (15 ounce) can pumpkin puree
  • 2 cups white sugar
  • 4 eggs
  • 1 cup coconut oil
  • ½ cup olive oil
  • 3 cups whole wheat flour
  • 2 cups hemp hearts
  • ½ cup wheat germ
  • ½ cup ground flax seeds
  • ½ cup brewers’ yeast
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon, or more to taste
  • 1 teaspoon salt
  • 1 (1.1 oz) package hemp protein powder
  • 2 cups dark chocolate chips
  • ¼ cup blackstrap molasses

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line 36 muffin cups with paper liners.
  2. Mix pumpkin
  3. sugar
  4. eggs
  5. coconut oil
  6. and olive oil together in a mixing bowl.
  7. Combine flour
  8. hemp
  9. wheat germ
  10. flax seeds
  11. yeast
  12. baking soda
  13. baking powder
  14. cinnamon
  15. salt
  16. and hemp powder in another bowl. Blend into pumpkin mixture. Stir in dark chocolate chips and molasses.
  17. Fill the prepared muffins tins evenly with batter.
  18. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean
  19. 15 to 18 minutes.
