Pumpkin Chocolate Chip Muffins

Description

Moist and delicious muffins! You may use up to one cup of chocolate chips if you like!

Ingredients

  • ¾ cup white sugar
  • ¼ cup vegetable oil
  • 2 eggs
  • ¾ cup canned pumpkin
  • ¼ cup water
  • 1 ½ cups all-purpose flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon ground cloves
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • ½ cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease and flour muffin pan or use paper liners.
  2. Whisk sugar
  3. oil
  4. and eggs together in a medium bowl. Stir in pumpkin and water until well blended.
  5. Mix together flour
  6. baking powder
  7. baking soda
  8. cinnamon
  9. nutmeg
  10. cloves
  11. and salt in a separate bowl.
  12. Add the wet ingredients into the dry ingredients and stir just to combine
  13. being careful not to overmix. Gently stir in chocolate chips.
  14. Fill muffin cups 2/3 full with batter. Bake in the preheated oven until a toothpick inserted into the center comes out clean
  15. 20 to 25 minutes.
