Pumpkin Chip Muffins

Description

This is a yummy muffin recipe that has become an annual tradition, especially for fall and Halloween class parties. Especially tasty when they are still warm, these pumpkin muffins are full to brimming with chocolate chips!

Ingredients

  • 4 eggs
  • 2 cups white sugar
  • 1 (15 ounce) can pumpkin
  • 1 ½ cups vegetable oil
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease two 12 cup muffin pans
  2. or line with paper baking cups.
  3. Beat the eggs in a large bowl
  4. and mix in the sugar
  5. pumpkin and oil.
  6. In a medium bowl
  7. mix the flour
  8. baking soda
  9. baking powder
  10. cinnamon and salt. Blend into the egg and pumpkin mixture. Fold in the chocolate chips. Transfer to the muffin pans.
  11. Bake in the preheated oven 15 to 20 minutes
  12. or until a toothpick inserted in the center comes out clean. Remove muffins from pans
  13. and cool on a wire rack.
