Chock full of good-for-you whole wheat flour, flax seeds, pumpkin, apples and walnuts!
Ingredients
- 1 cup all-purpose flour
- ¾ cup whole wheat flour
- 1 ¼ cups sugar
- 1 ½ teaspoons Spice Islands® Pumpkin Pie Spice
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon Argo® Baking Powder
- 1 cup canned pumpkin
- 1 apple, cored and shredded
- ⅓ cup Mazola® Corn Oil
- 1 egg
- 1 teaspoon Spice Islands® Pure Vanilla Extract
- ½ cup dried cranberries*
- 2 tablespoons flax seed
- ¼ cup chopped walnuts
Instructions
- Preheat oven to 375 degrees F. Combine all-purpose flour
- whole wheat flour
- sugar
- pumpkin pie spice
- baking soda
- salt and baking powder in medium bowl. Whisk together pumpkin
- apple
- oil
- egg and vanilla in a large bowl. Add dry ingredients
- mixing just until moistened. Stir in cranberries and flax seed. Portion into greased muffin cups or use paper liners. Sprinkle with walnuts.
- Bake for 20 to 25 minutes or until wooden pick inserted into center comes out clean. Cool in pan on wire rack 5 minutes. Remove from pan.
