Potato Spinach Casserole

Description

This simple recipe goes great with chicken, pork or steak.

Ingredients

  • 7 large potatoes, peeled and cubed
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1 cup sour cream
  • ¼ cup butter
  • 2 tablespoons chopped green onions
  • 2 teaspoons salt
  • ¼ teaspoon black pepper
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Grease a 2-quart casserole dish.
  2. Bring a large pot of salted water to a boil. Add potatoes and cook until tender
  3. about 15 minutes. Drain and mash.
  4. Combine mashed potatoes
  5. spinach
  6. sour cream
  7. butter
  8. green onions
  9. salt
  10. and pepper in a large bowl. Spoon into the prepared dish.
  11. Bake in the preheated oven for 15 minutes. Top with cheese and continue baking until cheese is melted
  12. about 5 more minutes.
