Description
This is a chicken casserole with a crispy crunchy potato chip topping. It is easy to make and tastes wonderful.
Ingredients
- 2 cups chopped, cooked chicken meat
- 1 cup cooked white rice
- 1 (10.75 ounce) can condensed cream of chicken soup
- ⅔ cup mayonnaise
- 2 tablespoons grated onion
- ½ cup chopped celery
- 1 (8 ounce) can sliced water chestnuts
- 1 tablespoon lemon juice
- ½ cup shredded sharp Cheddar cheese
- 2 cups crushed potato chips
- ¼ cup water
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl combine the chicken

- mayonnaise
- onion
- celery
- water chestnuts
- lemon juice
- water
- salt and pepper. Mix well. Spread this mixture into a lightly greased 9×13 inch baking dish. Cover with cheese
- then potato chips. Bake in the preheated oven for 20 to 25 minutes or until the potato chips are lightly browned.
