Potato Chip Chicken Casserole

Description

This is a chicken casserole with a crispy crunchy potato chip topping. It is easy to make and tastes wonderful.

Ingredients

  • 2 cups chopped, cooked chicken meat
  • 1 cup cooked white rice
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • ⅔ cup mayonnaise
  • 2 tablespoons grated onion
  • ½ cup chopped celery
  • 1 (8 ounce) can sliced water chestnuts
  • 1 tablespoon lemon juice
  • ½ cup shredded sharp Cheddar cheese
  • 2 cups crushed potato chips
  • ¼ cup water
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl combine the chicken

  5. mayonnaise
  6. onion
  7. celery
  8. water chestnuts
  9. lemon juice
  10. water
  11. salt and pepper. Mix well. Spread this mixture into a lightly greased 9×13 inch baking dish. Cover with cheese
  12. then potato chips. Bake in the preheated oven for 20 to 25 minutes or until the potato chips are lightly browned.
