Potato Bread from Idahoan®

Description

If you’ve ever tried potato bread, you know that the addition of mashed potatoes makes for some nice, soft bread and, unlike a lot of homemade breads, these loaves stay soft for a surprising number of days.

Ingredients

  • 1 cup Idahoan® Original Mashed Potatoes*
  • 1 ½ cups warm water
  • 2 (.25 ounce) packages active dry yeast**
  • 2 tablespoons sugar
  • 2 tablespoons melted, cooled butter or oil
  • 1 tablespoon salt
  • 4 ½ cups all-purpose flour, or more as needed

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a mixing bowl
  3. combine warm water and yeast; let stand for several minutes.
  4. Stir in mashed potatoes
  5. sugar
  6. butter
  7. and salt; mix well.
  8. Stir in enough flour to make a soft dough.
  9. Turn dough out onto a floured surface and knead 5-8 minutes
  10. or until dough is smooth and elastic
  11. adding flour as needed.
  12. Place dough in bowl
  13. cover
  14. and let rise 1 hour. Punch dough down
  15. divide in half
  16. and shape each half into a loaf.
  17. Place in 4 x 8 loaf pans
  18. cover
  19. and let rise 30-45 minutes
  20. or until doubled.
  21. Bake 30-35 minutes
  22. or until lightly browned. Cool on wire rack.

Total Time: 3 hrs
