Portuguese Chourico and Peppers

Description

Great as a sandwich like sloppy Joes or over mashed potatoes or rice.

Ingredients

  • 2 pounds chorizo sausage, casings removed and crumbled
  • 2 medium (blank)s green bell peppers, seeded and chopped
  • 2 medium (2-1/2″ dia)s sweet onion, peeled and chopped
  • 1 (6 ounce) can tomato paste
  • 1 cup red wine
  • 1 cup water
  • 2 tablespoons crushed garlic

Instructions

  1. In a slow cooker
  2. combine the sausage
  3. green pepper
  4. onion
  5. tomato paste
  6. wine
  7. water
  8. and crushed garlic. Stir so that everything is evenly distributed. Cover
  9. and set on Low. Cook for 8 hours. Uncover the pot
  10. and cook an additional 2 hours to allow some of the liquid to evaporate. Serve over rice
  11. or with Portuguese rolls.
