Portuguese Bean Soup II

Description

This is a Hawaii favorite. Hearty and full of flavor.

Ingredients

  • 2 pounds spicy Portuguese sausage, sliced
  • 1 pound ham hocks
  • 1 onion, sliced
  • 2 quarts water
  • 2 carrots, diced
  • 3 potatoes, diced
  • 1 small head cabbage, chopped
  • 1 (8 ounce) can tomato sauce
  • 2 (15 ounce) cans kidney beans
  • 1 (16 ounce) package macaroni

Instructions

  1. In a large pot over low heat
  2. combine sausage
  3. ham hocks
  4. onion and water. Cover and simmer 1 hour.
  5. Remove ham hock from soup
  6. remove meat
  7. tear into small pieces
  8. and return meat to pot. Stir in carrots
  9. potatoes
  10. cabbage and tomato sauce. Cover and continue cooking 60 to 90 minutes more.
  11. Stir in beans and pasta
  12. adding more water as needed
  13. and cook until heated through and pasta is tender
  14. 10 minutes.

Cook Time: 2 hrs 30 mins

Total Time: 3 hrs
