Pita Bread Tofu Sandwiches

Description

Tofu sandwiches make a quick, super-delicious dinner. The veggies listed are just suggestions. Anything you’ve got kickin’ around will work.

Ingredients

  • 1 tablespoon olive oil
  • ½ (12 ounce) package tofu, cubed
  • 6 mushrooms, sliced, or more to taste
  • 1 cup chopped broccoli
  • ½ cup sliced onion
  • 2 stalks celery, chopped
  • 3 tablespoons soy sauce
  • 1 ½ teaspoons cornstarch
  • 2 pita bread rounds
  • ½ cup shredded Cheddar cheese

Instructions

  1. Heat oil in a skillet over medium-high heat. Add tofu
  2. mushrooms
  3. broccoli
  4. onion
  5. and celery. Saute until just tender
  6. about 5 minutes.
  7. Mix soy sauce and cornstarch together in a bowl. Add mixture to the skillet with the tofu mixture. Cook until thickened
  8. 4 or 5 minutes more.
  9. Heat pita bread in a toaster until warm
  10. about 1 minute. Spoon the tofu mixture into the bread; add Cheddar cheese as garnish.
