Description
This is my personal take on gazpacho. It’s fresh, healthy, gluten-free, and can be easily vegan. Great summer recipe and great for beginners in the kitchen! DO NOT add water! I like to serve mine in chilled bowls with cooked prawns and fresh cilantro on top.
Ingredients
- 10 ripe tomatoes, quartered
- ½ red onion, diced
- 1 serrano chile pepper, seeded and diced
- ½ cup chopped fresh cilantro, or to taste
- 2 limes, juiced
- 3 cloves garlic, peeled
- 1 teaspoon red wine vinegar, or to taste
- salt to taste
- ¼ cup extra-virgin olive oil (Optional)
