Pesto Quinoa

Description

I got this recipe from a friend who was living in Ecuador. Quinoa was a staple of her diet there; it is a great source of protein.

Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups chicken broth
  • 2 tablespoons basil pesto
  • 1 tomato, diced
  • salt and pepper to taste

Instructions

  1. Bring quinoa and chicken broth to a boil in a saucepan; cover
  2. reduce heat to low
  3. and simmer until liquid is completely absorbed
  4. about 15 minutes.
  5. Remove the saucepan from heat; stir pesto into quinoa. Fold tomato into mixture. Season with salt and pepper.

Cook Time: 20 mins

Total Time: 25 mins
