Patio Shrimp Salad

Description

Shrimp tossed with rice, pickles, olives, raisins and some more salad goodies. A quick and easy summer salad.

Ingredients

  • 3 ½ cups cooked white rice
  • ¼ cup chopped dill pickles
  • ¼ cup chopped black olives
  • 1 tablespoon chopped onion
  • ½ teaspoon salt
  • 1 teaspoon minced green bell pepper
  • ½ cup raisins
  • 1 ½ cups tomato juice
  • 2 cups cooked salad shrimp
  • ¾ cup mayonnaise

Instructions

  1. Place rice in a medium-size mixing bowl. Mix pickles
  2. olives
  3. onion
  4. salt
  5. green pepper
  6. raisins and tomato juice into the rice. Stir well and let mixture stand 5 minutes.
  7. Mix shrimp and mayonnaise into the mixture
  8. toss lightly and serve.
