Pan-Fried Sand Dabs

Description

Pan-fried sand dabs. White meat fish–sweet!

Ingredients

  • ¼ cup milk
  • 1 large egg, beaten
  • ½ cup all-purpose flour
  • 1 pinch salt and ground black pepper to taste
  • 1 pound sand dab fillets
  • ½ cup dry bread crumbs
  • ¼ cup vegetable oil for frying
  • 1 lemon, cut into wedges

Instructions

  1. Beat milk and egg together in a bowl. Season flour with salt and pepper; dredge each fish fillet in flour mixture
  2. then dip into the egg-milk mixture. Roll in bread crumbs until thoroughly coated.
  3. Heat oil in a skillet over medium-high heat. Cook fillets in the hot oil until nicely golden brown
  4. 3 to 4 minutes per side. Serve immediately
  5. accompanied with lemon wedges.
