Description
This nutritious soup takes inspiration from the flavors of Spain. Garnish with store-bought (or homemade) harissa to add heat or garnish with a sprinkling of chopped Italian parsley.
Ingredients
- 1 large onion, diced
- 2 tablespoons olive oil
- 8 ounces Spanish chorizo, cut into 1/2 inch pieces
- 3 stalks celery, diced
- 3 carrots, diced
- 2 teaspoons ground cumin
- 1 tablespoon paprika
- ½ teaspoon ground turmeric
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 pinch saffron threads
- 5 garlic cloves, minced
- 2 sweet potatoes, peeled and cut into 1-inch pieces
- 8 cups chicken broth
- 4 cups lacinato (dinosaur) kale – washed, stemmed, and torn into pieces
- 1 lemon, juiced
- salt and pepper to taste
- 1 pinch harissa, or to taste (Optional)
- 1 tablespoon chopped fresh flat-leaf parsley, or to taste (Optional)
