Orange Oatmeal Muffins

Description

These are moist muffins with a hint of orange flavoring in it. I received this recipe from my great aunt at the time I was married.

Ingredients

  • 1 cup rolled oats
  • ½ cup orange juice
  • ½ cup boiling water
  • ½ cup butter
  • ½ cup packed brown sugar
  • ⅓ cup white sugar
  • 2 eggs, lightly beaten
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 cup raisins (Optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease or paper-line muffin pans.
  2. In a small bowl soak oats in orange juice and water for 15 minutes.
  3. In a large bowl cream together butter or margarine and sugars. Beat in eggs and oat mixture.
  4. In a separate bowl
  5. blend flour
  6. baking powder
  7. soda
  8. salt
  9. and nutmeg. Stir into batter. Stir in vanilla and raisins. Spoon batter into prepared muffin pans
  10. filling 2/3 full.
  11. Bake at 350 degrees F (175 degrees C) until golden brown
  12. about 20 minutes.
