Orange Ginger Shrimp Stir-Fry

Description

A fresh alternative to an Asian classic dish, stir-fry. You can substitute the vegetables for your preference and seasons.

Ingredients

  • 1 pound peeled and deveined shrimp
  • 2 tablespoons freshly squeezed orange juice
  • 1 teaspoon minced garlic
  • 1 teaspoon minced fresh ginger root
  • salt and ground black pepper, to taste
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 green bell pepper, diced
  • 1 yellow summer squash, cut into 1/4-inch slices
  • 1 cup chopped broccoli
  • ½ cup diced onion
  • ½ cup chopped carrot
  • orange, zested
  • ¼ teaspoon cayenne pepper
  • 1 ½ cups cooked rice (Optional)
