Orange Buns

Description

You can make these into braids or buns. Frost with an orange icing and sprinkle some nuts on top, if desired.

Ingredients

  • ¼ cup butter
  • 1 teaspoon white sugar
  • 1 cup hot milk
  • 2 tablespoons active dry yeast
  • 6 cups bread flour, divided
  • ½ cup white sugar
  • 2 eggs
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon salt

Instructions

  1. Stir butter and 1 teaspoon sugar into the hot milk until butter is melted. When mixture is lukewarm
  2. stir in yeast and set aside for 5 minutes.
  3. When mixture is creamy
  4. transfer to a large mixing bowl. Mix in 2 cups of bread flour. Add 1/2 cup sugar
  5. eggs
  6. orange juice
  7. orange zest
  8. and salt and beat until combined. Add remaining flour
  9. mixing well after each addition
  10. until it pulls away from the sides of the bowl.
  11. Knead for about 10 minutes. Transfer dough to a greased bowl
  12. cover with plastic wrap
  13. and let rise until doubled
  14. about 1 hour. If time permits
  15. you can punch dough down
  16. cover it
  17. and let it rise again.
  18. Transfer dough to a lightly floured work surface. Cut dough into 3 balls
  19. cover with plastic wrap
  20. and let rest for 10 minutes.
  21. Preheat oven to 375 degrees F (190 degrees C). Lightly grease two baking sheets or line with parchment paper.
  22. Shape each piece of dough into braided loaves or buns; place on baking sheets. Let rise until doubled
  23. about 30 minutes.
  24. Bake until rolls or loaves are golden brown
  25. 10 to 12 minutes for individual buns
  26. about 20 minutes for braids. Frost rolls
  27. if desired (see Cook’s Note) or sprinkle with confectioners’ sugar.
