Old-Fashioned Scalloped Corn

Description

Delicious country style creamed corn casserole, a family favorite! Originally submitted to ThanksgivingRecipe.com.

Ingredients

  • 3 (15 ounce) cans creamed corn
  • 2 eggs
  • 1 cup crushed saltine crackers
  • ½ cup butter
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Butter an 8x11x2-inch casserole dish.
  2. Combine creamed corn
  3. 1/2 cup cracker crumbs
  4. 1/4 cup melted butter
  5. and eggs in a large bowl; mix well. Pour mixture into the prepared dish.
  6. Mix remaining 1/2 cup cracker crumbs and remaining 1/4 cup melted butter with paprika and pepper in a small bowl. Sprinkle crumb topping over casserole.
  7. Bake in the preheated oven until topping browns slightly and filling bubbles along edges
  8. 30 to 40 minutes.
