Oatmeal Raisin Toffee Cookies

Description

The toffee candy bar bits make this cookie VERY addictive! A great twist on an old-fashioned cookie.

Ingredients

  • 1 cup butter, softened
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3 cups rolled oats
  • 1 cup raisins
  • 1 cup crushed toffee candy

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. In a large bowl
  3. cream together the butter
  4. brown sugar and white sugar. Beat in the eggs
  5. one at a time then stir in the vanilla. Combine the flour
  6. baking soda and cinnamon; stir into the creamed mixture. Blend in the oatmeal and toffee bits. Drop by rounded spoonfuls onto the prepared cookie sheet.
  7. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
