Oatmeal Date Cookies

Description

These cookies are easy to make and one of my favorites.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup packed brown sugar
  • 1 cup shortening
  • 3 eggs
  • ½ cup white sugar
  • 1 teaspoon vanilla extract
  • 2 cups quick cooking oats
  • 1 cup dates, pitted and chopped
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C) and grease cookie sheets.
  2. In a separate bowl
  3. sift together flour
  4. baking powder
  5. baking soda
  6. and salt. Set aside.
  7. In a large bowl
  8. cream together shortening and both sugars until light and fluffy
  9. using an electric mixer at medium speed.
  10. Add eggs
  11. one at a time
  12. beating well after each. Blend in vanilla.
  13. Gradually add dry ingredients to creamed mixture
  14. mixing well with a spoon.
  15. Stir in oats
  16. dates
  17. and walnuts.
  18. Drop dough by teaspoonfuls about 2 inches apart on a cookie sheet.
  19. Bake for 8 minutes or until lightly browned. Remove from cookie sheets to cool on racks.
