Oatmeal Cranberry White Chocolate Chunk Cookies

Description

Oatmeal cookies using dried cranberries and white chocolate chips, or you can use chocolate chips if you wish.

Ingredients

  • ⅔ cup butter, softened
  • ⅔ cup packed brown sugar
  • 2 eggs
  • 1 ½ cups rolled oats
  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 ¼ cups dried cranberries
  • ⅔ cup coarsely chopped white chocolate

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time. Combine oats

  6. mixing well after each addition. Stir in dried cranberries and white chocolate.
  7. Drop spoonfuls of dough 2 inches apart onto ungreased cookie sheets.
  8. Bake in the preheated oven until edges are golden
  9. about 10 to 12 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.
