Oatmeal Cake I

Description

A good, moist, oatmeal cake with a broiled coconut topping.

Ingredients

  • 1 ½ cups boiling water
  • 1 cup rolled oats
  • ½ cup butter
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¼ cup packed brown sugar
  • ½ cup white sugar
  • 1 cup flaked coconut
  • 6 tablespoons butter, melted
  • ¼ teaspoon vanilla extract
  • ¼ cup cream

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch pan.
  2. Pour boiling water over oats in a small bowl. Mix well
  3. and set aside to cool.
  4. Beat brown sugar
  5. white sugar
  6. butter
  7. and eggs in a large bowl until creamy. Mix in flour
  8. baking soda
  9. cinnamon
  10. nutmeg
  11. and salt. Stir in cooled oatmeal until combined. Pour batter into the prepared pan.
  12. Bake in the preheated oven until a toothpick inserted in the center comes out clean
  13. about 35 minutes.
  14. While the cake is baking
  15. make the topping: Combine coconut
  16. white sugar
  17. and brown sugar in a mixing bowl. Add melted butter
  18. cream
  19. and vanilla; stir until well combined.
  20. Remove cake from the oven; turn on the broiler.
  21. Drop small spoonfuls of topping mixture over the cake
  22. then carefully spread topping into an even layer to cover the surface.
  23. Place under the preheated broiler until topping is bubbly and lightly browned
  24. 2 to 5 minutes.
