No-Bake Power Bites

Description

Delicious and filling snacks my friend Danielle told me about. I cannot get enough of these! Nothing processed and jam-packed with nutrition. I took these on a 5-hour flight and they kept me satisfied. Also my mom is on a no-processed-food cancer diet and these are a life-saver for the days she doesn’t feel well enough to juice and cook! Store bites in the refrigerator or freezer.

Ingredients

  • ½ cup almond butter
  • ⅓ cup honey
  • 1 teaspoon vanilla extract, or more to taste
  • 1 cup rolled oats
  • 1 cup unsweetened shredded coconut
  • ½ cup chocolate chips
  • ½ cup cocoa nibs
  • sea salt to taste

Instructions

  1. Mix almond butter
  2. honey
  3. and vanilla extract together in a bowl until smooth. Stir oats
  4. coconut
  5. chocolate chips
  6. cocoa nibs
  7. and sea salt into almond butter mixture until well combined; refrigerate for 30 minutes.
  8. Roll mixture into balls using your hands.
