A vegan banana bread snack bar made with nuts, oats, dates, and protein powder to keep you fuller. Store bars in freezer; they can be eaten directly from the freezer without thawing.

  • ½ cup mashed banana
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats, divided
  • ½ cup walnuts
  • ½ cup almonds
  • 2 tablespoons ground flax seed
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup vanilla protein powder (such as MCT Lean®)
  • ¼ cup chocolate chips (Optional)
