Ms. Angela’s Smothered Cabbage

My best friend and I make this every year on New Year’s Day, and it’s so delicious! We always serve it with homemade cornbread, black eyed peas, Champagne, and ham. Happy New Year, everyone!

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 clove garlic, minced
  • 1 pound ground pork
  • 1 tablespoon Creole seasoning (such as Tony Cachere’s®)
  • salt to taste
  • 1 head cabbage, cut into 2-inch squares
  • ½ (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), or more to taste

Instructions

  1. Heat oil in a large pot over medium heat. Add onion
  2. green pepper
  3. and garlic. Cook and stir until browned
  4. about 5 minutes. Add pork
  5. Creole seasoning
  6. and salt. Cook until pork is browned
  7. 5 to 7 minutes. Do not drain.
  8. Arrange cabbage over pork; cover with diced tomatoes. Add lid and reduce heat to medium. Cook
  9. without stirring
  10. until cabbage is wilted
  11. 15 to 20 minutes. Stir and taste for seasoning.
