Mother’s Pecan Pancake Muffins

Quick and easy, kid-friendly, syrup-free pancakes.

Ingredients

  • 2 cups self-rising flour
  • ½ cup white sugar
  • ½ cup chopped pecans, or to taste (Optional)
  • ¼ cup brown sugar
  • 1 egg
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine flour

  7. and oil in a bowl. Mix batter thoroughly. Fill each cup of a muffin tin 2/3-full with batter.
  8. Bake in the preheated oven until tops spring back when lightly pressed
