Mint Chocolate Brownies

Description

Our famous Christmas dessert for the holidays! You can add crushed candy cane on the top layer, or add chopped walnuts to the bottom brownie layer. These mint brownies look nice on a tray of desserts, also. Store in the refrigerator for up to 1 week.

Ingredients

  • 1 cup white sugar
  • 1 cup butter, melted
  • ½ cup cocoa powder
  • 3 eggs, beaten
  • 1 cup all-purpose flour
  • 1 tablespoon vanilla extract
  • 1 pinch salt
  • 2 cups powdered sugar
  • ¼ cup melted butter
  • 2 ½ tablespoons milk
  • 2 tablespoons mint extract
  • 4 drops green food coloring
  • 1 (12 ounce) bag semisweet chocolate chips
  • ⅓ cup cream

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 13×9-inch baking dish.
  2. Combine sugar
  3. butter
  4. cocoa powder
  5. and eggs in a large bowl; beat with an electric mixer until well mixed. Add flour
  6. vanilla extract
  7. and salt; mix to combine. Pour batter into the prepared baking dish.
  8. Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan
  9. about 25 minutes. Let cool
  10. about 20 minutes.
  11. While brownies are cooling
  12. mix powdered sugar
  13. melted butter
  14. milk
  15. mint extract
  16. and food coloring with an electric mixer until smooth and creamy. Spread frosting on cooled brownies; place in refrigerator.
  17. Place chocolate chips and cream in a glass bowl over simmering water. Stir frequently
  18. scraping down the sides with a rubber spatula to avoid scorching
  19. until chocolate is melted
  20. about 5 minutes. Drizzle over brownies and return to the refrigerator
  21. until top layers are set
  22. about 45 minutes.
