Mini Sloppy Joes with Pulled Pork

Description

If you have leftover pulled pork, with no sauce on it, turn it into sloppy Joe-type sandwiches for a twist on hamburger. Mini Kaiser rolls provide a sturdy, flavorful base for the sandwiches, which can be served alone as an appetizer, or as a main dish when accompanied by your favorite sides. We like fresh corn on the cob and coleslaw.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 cup finely chopped onion
  • ⅔ cup finely chopped green bell pepper
  • 1 cup beef stock
  • 1 cup ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon whole-grain mustard
  • 4 cloves garlic, minced
  • 1 teaspoon chili powder
  • 2 cups cooked pulled pork without sauce
  • 3 dashes hot pepper sauce (such as Tabasco®), or to taste
  • salt and ground black pepper to taste
  • 10 mini Kaiser rolls, split and warmed

Instructions

  1. Melt butter in a large nonstick skillet over medium heat. Add onion and bell pepper
  2. and cook
  3. stirring
  4. about 5 minutes. Add beef stock
  5. ketchup
  6. brown sugar
  7. Worcestershire sauce
  8. mustard
  9. garlic
  10. and chili powder; stir until well mixed.
  11. Mix in pulled pork until well combined. Season with hot sauce
  12. salt
  13. and pepper. Bring mixture to a boil
  14. reduce heat to low
  15. and allow to bubble gently until thickened and reduced
  16. 20 to 25 minutes.
  17. Place about 1/2 cup of the mixture on each sliced mini Kaiser roll and serve immediately.
