Millet Muffins

Description

A lightly sweetened, extremely yummy muffin.

Ingredients

  • 2 ¼ cups whole wheat flour
  • ⅓ cup millet
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 egg, lightly beaten
  • ½ cup vegetable oil
  • ½ cup honey

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease 16 muffin cups.
  2. In a large bowl
  3. mix the whole wheat flour
  4. millet flour
  5. baking powder
  6. baking soda
  7. and salt. In a separate bowl
  8. mix the buttermilk
  9. egg
  10. vegetable oil
  11. and honey. Stir buttermilk mixture into the flour mixture just until evenly moist. Transfer batter to the prepared muffin cups.
  12. Bake 15 minutes in the preheated oven
  13. or until a toothpick inserted in the center of a muffin comes out clean.
