Mendocino Chicken Salad

Description

This is a delicious smoked chicken salad with almonds and fresh basil. Serve it over lettuce or on a sandwich.

Ingredients

  • 1 (6 ounce) package smoked chicken breast, skin removed, cubed
  • 1 cup seedless grapes, halved
  • ½ cup diced red onion
  • 3 stalks celery, diced
  • ¼ cup fresh basil leaves, cut into thin strips
  • 1 cup blanched slivered almonds
  • ¾ cup mayonnaise

Instructions

  1. In a large bowl
  2. combine the smoked chicken
  3. grapes
  4. red onion
  5. celery
  6. basil
  7. almonds
  8. and mayonnaise. Mix well; chill and serve.
