Description
This is a variation of one of my favorites, cold whole grains, raw vegetables, feta, olives, and balsamic vinegar. This is a simple dish that is healthy and delicious!
Ingredients
- 1 cup cooked shrimp
- 1 lemon, juiced
- salt and ground black pepper to taste
- 1 pint grape tomatoes
- 1 cup cooked quinoa
- ¾ English cucumber, chopped
- ½ yellow bell pepper, chopped
- ½ green bell pepper, chopped
- ½ cup kalamata olives, chopped
- ¼ red onion, chopped
- ¼ cup crumbled feta cheese
- ¼ cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon oregano
